  • 2½ cups uncooked rotini pasta
  • 1 cup sour cream
  • 1 cup salsa
  • 1 packet mild taco seasoning
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 can (15 oz) corn (drained)
  • 1 can (15 oz) black beans (drained & rinsed)
  • 2½ cups cooked chicken
  • 2 cups shredded cheese (cheddar or Monterey Jack)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13 baking dish with cooking spray.
  2. Cook rotini pasta according to package directions until al dente; drain and set aside.
  3. In a large mixing bowl, combine sour cream, salsa, taco seasoning, and spices; mix well.
  4. Add drained pasta to the sauce mixture along with corn, black beans, cooked chicken, and 1 cup cheese; stir to combine.
  5. Pour the mixture into the prepared baking dish, top with remaining cheese, cover with foil, and bake for 20 minutes.
  6. Remove foil and bake for an additional 5 minutes until bubbly.
