- 1 can (15 oz) corn (drained)
- 1 can (15 oz) black beans (drained & rinsed)
- 2½ cups cooked chicken
- 2 cups shredded cheese (cheddar or Monterey Jack)
Instructions
- Preheat the oven to 350°F (175°C) and prepare a 9×13 baking dish with cooking spray.
- Cook rotini pasta according to package directions until al dente; drain and set aside.
- In a large mixing bowl, combine sour cream, salsa, taco seasoning, and spices; mix well.
- Add drained pasta to the sauce mixture along with corn, black beans, cooked chicken, and 1 cup cheese; stir to combine.
- Pour the mixture into the prepared baking dish, top with remaining cheese, cover with foil, and bake for 20 minutes.
