Ingredients

  • 2 oranges (quartered with peels)
  • 2 lemons (quartered with peels)
  • 2 red onions (sliced)
  • 1 white onion (sliced)
  • 2 jalapenos (sliced)
  • 7 oz. ginger root (peeled and sliced)
  • 2 oz. turmeric root (peeled and sliced)
  • 7 oz. horseradish root (peeled and sliced)
  • 2 heads of garlic (crushed)
  • Fresh rosemary
  • Ceylon cinnamon sticks
  • Star anise
  • Whole rose hips
  • 2 bottles apple cider vinegar
  • Raw honey

Instructions

  1. Wash all produce thoroughly.
  2. Cut oranges and lemons into quarters, keeping peels on; slice onions, jalapenos, ginger, turmeric, and horseradish; crush garlic.
  3. Layer chopped ingredients in clean glass jars until three-quarters full.
  4. Pour apple cider vinegar over ingredients until submerged, leaving space at the top for expansion.
  5. Add raw honey to taste and stir gently.
  6. Seal jars tightly and shake gently to mix.
  7. Store in a cool dark place for at least two weeks, shaking daily.
  8. After steeping, strain out solids using cheesecloth or fine strainer; store liquid in clean jars.
