  • 16 oz semisweet chocolate chips
  • 4 large eggs
  • 1 1/4 cups granulated sugar
  • 1 tablespoon instant coffee granules
  • 3 tablespoons light olive oil or vegetable oil
  • 1 tablespoon vanilla extract
  • 2/3 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Butter and line a 9×9-inch baking pan with parchment paper.
  2. Melt butter and 2 cups of chocolate chips in a medium saucepan over low heat. Cool for 15 minutes.
  3. In a large bowl, whisk together eggs, sugar, coffee granules, oil, and vanilla extract until combined.
  4. Stir the cooled chocolate mixture into the egg mixture until smooth.
  5. In another bowl, whisk flour, cocoa powder, baking powder, and salt.
  6. Gently fold dry ingredients into the wet mixture until just combined.
  7. Pour batter into the prepared pan and sprinkle remaining chocolate chips on top. Bake for 35–40 minutes.
