  • 1 baguette
  • 4 Roma tomatoes
  • ½ seedless English cucumber
  • 1 ½ cups freshly crumbled feta
  • ½ cup chopped green onion
  • 1 lemon (juice only)
  • ¼ cup extra virgin olive oil
  • 1 tsp red wine vinegar
  • ½ garlic powder
  • ½ salt
  • ¼ tsp freshly ground black pepper
  • ¼ dried oregano leaves
  • dried dill
  • ½ tsp dried basil (or 1 TBSP fresh basil)

Instructions

  1. Preheat the oven to 400°F (200°C). Slice the baguette into ½-inch thick pieces and arrange them on a baking sheet.
  2. Drizzle olive oil over each slice and bake for about 10 minutes until golden brown.
  3. While the bread is toasting, chop the tomatoes and cucumber. In a mixing bowl, combine them with feta, green onions, lemon juice, olive oil, red wine vinegar, garlic powder, salt, black pepper, oregano leaves, dill, and basil.
  4. Once the bread is toasted and slightly cooled, top each slice generously with the mixture. Serve immediately for optimal freshness.
