Ingredients
- 1 baguette
- 4 Roma tomatoes
- ½ seedless English cucumber
- 1 ½ cups freshly crumbled feta
- ½ cup chopped green onion
- 1 lemon (juice only)
- ¼ cup extra virgin olive oil
- 1 tsp red wine vinegar
- ½ garlic powder
- ½ salt
- ¼ tsp freshly ground black pepper
- ¼ dried oregano leaves
- ⅛ dried dill
- ½ tsp dried basil (or 1 TBSP fresh basil)
Instructions
- Preheat the oven to 400°F (200°C). Slice the baguette into ½-inch thick pieces and arrange them on a baking sheet.
- Drizzle olive oil over each slice and bake for about 10 minutes until golden brown.
- While the bread is toasting, chop the tomatoes and cucumber. In a mixing bowl, combine them with feta, green onions, lemon juice, olive oil, red wine vinegar, garlic powder, salt, black pepper, oregano leaves, dill, and basil.
- Once the bread is toasted and slightly cooled, top each slice generously with the mixture. Serve immediately for optimal freshness.
