  • ¼ cup ghee or butter, divided
  • 1 tablespoon olive oil
  • 1 lb Yukon gold potatoes, cut into ½ inch cubes
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • 1 ¼ lb sirloin steak, cut into ½ inch cubes

Instructions

  1. Heat a cast iron skillet over medium heat and add olive oil and two tablespoons of ghee.
  2. Add potatoes, season with garlic, thyme, oregano, salt, and pepper. Cook until golden brown (8-10 minutes), stirring occasionally.
  3. Remove potatoes and increase heat to medium-high. Add remaining ghee and sear steak bites for about 2 minutes on each side until golden brown.
  4. Return potatoes to the skillet with the steak; mix well and adjust seasoning as necessary.
