- 1/4 cup margarine
- 1/4 cup all-purpose flour
- 8 egg yolks
- 1 cup cooked white rice
- 1 cup diced cooked chicken
- 16 lemon slices (for garnish)
Instructions
- In a large pot, combine chicken broth, lemon juice, carrots, onion, celery, chicken soup base, and ground white pepper. Bring to a boil and then simmer for 15–20 minutes until vegetables are tender.
- In a small bowl, mix margarine and flour into a smooth paste; stir into the soup and cook for an additional 8–10 minutes until slightly thickened.
- Beat egg yolks until pale; temper them by slowly whisking in a ladleful of hot soup. Gradually add back to the pot while stirring continuously without boiling.
- Mix in the cooked rice and chicken; heat through for a few more minutes.
- Serve warm, garnished with fresh lemon slices.
