Ingredients
- 4 nectarines
- 8 ounces burrata cheese
- 8 slices prosciutto
- 4 ounces cherry tomatoes
- 2 heirloom tomatoes
- 1/2 cup fresh cherries
- 1/2 cup mixed baby spring greens
- Lemon herb vinaigrette (fresh lemon juice, white wine vinegar, lemon zest, fresh herbs, extra virgin olive oil)
Instructions
- Preheat your grill or grill pan over medium-high heat.
- Cut nectarines into eighths and brush lightly with olive oil. Grill for 2-3 minutes per side until marked and softened.
- In a bowl, whisk together all vinaigrette ingredients.
- In a large bowl, combine mixed greens, cherry tomatoes, heirloom tomato slices, cherries, and vinaigrette. Toss gently.
