  • 2 large eggs
  • ½ cup pumpkin puree
  • ⅓ cup pure maple syrup
  • ¼ cup coconut sugar
  • ½ cup melted coconut oil
  • 1 tsp vanilla extract
  • ⅔ cup oat flour
  • ¾ cup rolled oats
  • 1 tbsp pumpkin pie spice
  • ½ tsp baking soda
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350ºF and line an 8×8-inch baking pan with parchment paper.
  2. In a large mixing bowl, whisk together the eggs, pumpkin puree, maple syrup, coconut sugar, melted coconut oil, and vanilla extract until smooth.
  3. Add the oat flour, rolled oats, pumpkin pie spice, and baking soda to the wet mixture. Stir gently until just combined, then fold in the chocolate chips.
  4. Pour the batter into the lined pan and bake for 24 – 26 minutes or until a toothpick inserted comes out clean.
  5. Allow to cool for at least 10 minutes before cutting into squares.
