  • 12 tablespoons very cold unsalted butter, diced into cubes
  • ½ cup very cold heavy cream
  • 2 large eggs, divided
  • 2 cups all-purpose flour, plus more for rolling out scones
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • ½ teaspoon kosher salt
  • 1 heaping cup powdered sugar
  • 2 teaspoons chai spice blend
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream
  • 1 tablespoon maple syrup
  • pinch of kosher salt

Instructions

  1. Pull the butter, heavy cream, and eggs out of the refrigerator.
  2. Measure the heavy cream into a 2-cup liquid measure. Whisk in 1 large egg + 1 large egg yolk. (Reserve the remaining egg white for brushing the scones.) Chill this mixture in the freezer.
  3. In your food processor, combine: 2 cups all-purpose flour, ¼ cup granulated sugar, 1 tablespoon baking powder, 1 tablespoon chai spice blend, ½ teaspoon kosher salt. Pulse a few times until mixed well.
  4. Add the cold diced butter to the flour mixture in your food processor. Pulse about 25–30 times until it resembles fluffy parmesan cheese with some larger pieces remaining.
  5. Gradually add your chilled cream and egg mixture while pulsing until just combined into a slightly wet dough.
  6. Transfer to a lightly floured surface, form into a ball, then flatten into a disc. Wrap in plastic wrap and freeze for 30 minutes.
  7. Roll out dough on a floured surface: For full-sized scones, aim for about 1 inch thick. For mini scones, roll into a rectangle about ½ inch thick. Cut into desired shapes using either wedges or strips.
  8. Preheat your oven to 375 degrees F. Line a baking sheet with parchment paper or Silpat mat. Place shaped scones on prepared sheet and brush generously with reserved egg wash. Bake for 20–22 minutes until golden brown.
  9. In a small bowl, whisk together: 1 heaping cup powdered sugar, 2 teaspoons chai spice blend, 1 teaspoon vanilla extract, 3 tablespoons heavy cream, 1 tablespoon maple syrup, pinch of kosher salt.
  10. Once baked, submerge each scone's top into glaze until well coated. Allow glaze to set before serving—enjoy these delightful treats warm!
