Ingredients
- 16 large mushrooms
- 1/2 lb Italian sausage
- 2 tbsp olive oil
- 1 small onion
- 2 garlic cloves
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 3 tbsp cream cheese
- Fresh parsley
Instructions
- Preheat your oven to 375°F and lightly grease a baking dish.
- Remove stems from mushrooms and finely chop.
- In a skillet over medium heat, cook the sausage until browned. Add olive oil, chopped mushroom stems, onion, and minced garlic; sauté until onions are soft.
- In a mixing bowl, combine the sausage mixture with breadcrumbs, Parmesan, parsley, cream cheese, salt, and pepper.
- Stuff each mushroom cap with the filling and sprinkle with extra Parmesan.
- Drizzle with olive oil and bake for 25–30 minutes until golden brown.
