  • 16 large mushrooms
  • 1/2 lb Italian sausage
  • 2 tbsp olive oil
  • 1 small onion
  • 2 garlic cloves
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 3 tbsp cream cheese
  • Fresh parsley

Instructions

  1. Preheat your oven to 375°F and lightly grease a baking dish.
  2. Remove stems from mushrooms and finely chop.
  3. In a skillet over medium heat, cook the sausage until browned. Add olive oil, chopped mushroom stems, onion, and minced garlic; sauté until onions are soft.
  4. In a mixing bowl, combine the sausage mixture with breadcrumbs, Parmesan, parsley, cream cheese, salt, and pepper.
  5. Stuff each mushroom cap with the filling and sprinkle with extra Parmesan.
  6. Drizzle with olive oil and bake for 25–30 minutes until golden brown.
