  • 1 tablespoon olive oil
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 2 tablespoons ginger (grated)
  • 5 cups carrots (peeled & chopped)
  • 4 cups vegetable broth
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried thyme leaves
  • 13.5 oz coconut milk (full fat)
  • Juice of 1/2 lime

Instructions

  1. Sauté chopped onion in the Instant Pot with olive oil until translucent (5-6 minutes).
  2. Add minced garlic and grated ginger; cook for another 1-2 minutes.
  3. Stir in chopped carrots, vegetable broth, salt, pepper, and thyme.
  4. Lock the lid, set to high pressure, and cook for 5 minutes.
  5. Allow natural pressure release for 10 minutes before manually releasing any remaining pressure.
  6. Use an immersion blender to puree until smooth, then stir in coconut milk and lime juice.
