- 5 cups carrots (peeled & chopped)
- 4 cups vegetable broth
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon dried thyme leaves
- 13.5 oz coconut milk (full fat)
- Juice of 1/2 lime
Instructions
- Sauté chopped onion in the Instant Pot with olive oil until translucent (5-6 minutes).
- Add minced garlic and grated ginger; cook for another 1-2 minutes.
- Stir in chopped carrots, vegetable broth, salt, pepper, and thyme.
- Lock the lid, set to high pressure, and cook for 5 minutes.
- Allow natural pressure release for 10 minutes before manually releasing any remaining pressure.
- Use an immersion blender to puree until smooth, then stir in coconut milk and lime juice.
