- 1/2 cup honey
- 1/3 cup soy sauce
- 1/3 cup diced onion
- 1/4 cup ketchup
- 2 tablespoons vegetable oil
- 4 minced garlic cloves
- Salt and pepper to taste
- 3 teaspoons cornstarch (dissolved in 1/4 cup water)
Instructions
- Season the chicken breasts with salt and pepper and place them in the Instant Pot.
- In a mixing bowl, combine honey, soy sauce, onion, ketchup, vegetable oil, and minced garlic. Pour this mixture over the chicken.
- Secure the lid on the Instant Pot and set it to seal. Cook on the Meat setting for 15 minutes.
- After cooking, perform a quick release of steam.
- Remove the chicken and stir in the dissolved cornstarch into the sauce. Press Sauté and cook for about 5 minutes until thickened.
- Cut the chicken into bite-sized pieces, return it to the pot, toss with sauce, garnish with sesame seeds and green onions, and serve over rice.
