Ingredients
- 16 oz penne pasta
- 2 lb hot Italian sausage (or sweet/mild)
- 24 oz shredded mozzarella cheese
- 1 medium onion, diced
- 5 cloves garlic, minced
- 28 oz can diced tomatoes
- 1½ tsp basil
- 1½ tsp oregano
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F and prepare a 3-quart casserole dish.
- Cook the sausage in a skillet until browned; drain excess grease.
- Sauté onions and garlic in reserved grease until translucent.
- Stir in diced tomatoes, basil, oregano, salt, and pepper; simmer for 20-30 minutes.
- Cook penne pasta until al dente; combine with sausage mixture and half of the mozzarella.
- Layer into the casserole dish: half of the mixture, some cheese, remaining mixture, and top with cheese.
