  • 2 lb hot Italian sausage (or sweet/mild)
  • 24 oz shredded mozzarella cheese
  • 1 medium onion, diced
  • 5 cloves garlic, minced
  • 28 oz can diced tomatoes
  • 1½ tsp basil
  • 1½ tsp oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F and prepare a 3-quart casserole dish.
  2. Cook the sausage in a skillet until browned; drain excess grease.
  3. Sauté onions and garlic in reserved grease until translucent.
  4. Stir in diced tomatoes, basil, oregano, salt, and pepper; simmer for 20-30 minutes.
  5. Cook penne pasta until al dente; combine with sausage mixture and half of the mozzarella.
  6. Layer into the casserole dish: half of the mixture, some cheese, remaining mixture, and top with cheese.
  7. Cover with foil and bake for 30 minutes; uncover for an additional few minutes if desired.
