  • 1 pound Italian sausage
  • 4 strips bacon
  • 1/2 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 small carrots (peeled & chopped)
  • 2 cups fresh baby spinach
  • 4 cans (14 ounces each) cannellini beans (drained)
  • 4 cups chicken broth
  • Italian seasoning
  • dried rosemary
  • salt & pepper

Instructions

  1. Cook the sausage and bacon in a large soup pot over medium-high heat until crispy (about 15 minutes). Set aside.
  2. Sauté onion in the remaining fat for 3-5 minutes; add garlic and cook for an additional 30 seconds.
  3. Stir in the drained beans, chicken broth, Italian seasoning, and rosemary; scrape the bottom of the pot.
  4. Remove from heat and blend with an immersion blender to desired consistency.
  5. Return meat to the pot with chopped carrots; bring to a boil, then simmer for 15-20 minutes until carrots are tender.
  6. Stir in spinach until wilted; adjust seasoning before serving.
