Ingredients

  • 4 cups Water
  • 2 tbsp Kashmiri/Himalayan green tea
  • 1/2 tsp Baking soda
  • 12 Star anise
  • 2 Cardamom pods (crushed)
  • 1 Cinnamon stick
  • 1/4 tsp Salt
  • 2 cups Whole milk
  • Sugar or honey to taste

Instructions

  1. In a saucepan, bring water to a boil. Add the green tea and boil for about 5 minutes.
  2. Stir in baking soda and continue boiling for another 2 minutes until the color deepens.
  3. Add star anise, crushed cardamom pods, and cinnamon stick; boil for another minute.
  4. Reduce heat and simmer for 20-30 minutes until reduced by half.
  5. Stir in salt and mix well.
  6. Add whole milk and bring to a boil while stirring constantly until it turns pink.
  7. Strain the chai into cups, sweeten to taste with sugar or honey, and garnish with crushed nuts if desired.
