  • 1 lb ground turkey (or preferred ground meat)
  • 4 ribs celery, diced
  • 1 red bell pepper, diced
  • 1/2 small onion, diced
  • 3 cloves garlic, minced
  • 12 oz frozen cauliflower rice
  • 3 tbsp bacon grease or olive oil
  • 3/4 tsp paprika
  • 1/4 tsp oregano – dried
  • 1/4 tsp thyme – dried
  • 1/8 tsp cayenne pepper
  • 1 1/2 tsp salt – divided
  • 1 tsp garlic powder – divided
  • 1/4 tsp black pepper
  • 1/4 cup water or chicken stock for added flavor
  • Sliced Green Onions for garnish

Instructions

  1. Heat bacon grease or olive oil in a heavy-bottomed skillet over medium-high heat. Add ground meat and season with salt (1 tsp), black pepper (1/4 tsp), and garlic powder (1/2 tsp). Cook until browned.
  2. Reduce heat to medium; add onion, celery, and red bell pepper. Sauté for about 5 minutes until tender. Stir in minced garlic and spices; cook for an additional minute.
  3. Add frozen cauliflower rice and chicken stock or water. Season with remaining salt and garlic powder. Stir well to combine. Cook until cauliflower rice is tender.
  4. Serve warm, garnished with sliced green onions.
