- 2 cups leftover turkey (white or dark meat)
- 1/2 cup fresh squeezed orange juice
- 1 white onion (sliced)
- 3 tablespoons olive oil
- 1.5 teaspoons paprika
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 2 teaspoons light brown sugar (divided)
- 6 flour tortillas
- 2 tablespoons finely diced red onion
- 2 tablespoons fresh cilantro (chopped)
- 2 tablespoons cotija cheese
Instructions
- In a small bowl, mix paprika, cumin, garlic powder, and brown sugar.
- Shred turkey and combine with orange juice and seasoning mixture in a medium bowl.
- Heat 1 tablespoon of olive oil in a large pot over medium-low heat; add turkey and onion. Cover and simmer for 30 minutes.
- In a cast iron skillet, heat remaining olive oil until shimmering. Add the turkey mixture and cook until browned and crispy (12-15 minutes).
- Serve in warmed tortillas topped with red onion, cilantro, and cotija cheese.
