  • 2 cups leftover turkey (white or dark meat)
  • 1/2 cup fresh squeezed orange juice
  • 1 white onion (sliced)
  • 3 tablespoons olive oil
  • 1.5 teaspoons paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 2 teaspoons light brown sugar (divided)
  • 6 flour tortillas
  • 2 tablespoons finely diced red onion
  • 2 tablespoons fresh cilantro (chopped)
  • 2 tablespoons cotija cheese

Instructions

  1. In a small bowl, mix paprika, cumin, garlic powder, and brown sugar.
  2. Shred turkey and combine with orange juice and seasoning mixture in a medium bowl.
  3. Heat 1 tablespoon of olive oil in a large pot over medium-low heat; add turkey and onion. Cover and simmer for 30 minutes.
  4. In a cast iron skillet, heat remaining olive oil until shimmering. Add the turkey mixture and cook until browned and crispy (12-15 minutes).
  5. Serve in warmed tortillas topped with red onion, cilantro, and cotija cheese.
