  • 1½ cups half-and-half
  • 8 ounces cream cheese (softened)
  • ½ cup powdered sugar
  • 16 ounces Cool Whip (thawed)
  • 1 can (21 oz) blueberry pie filling

Instructions

  1. Prepare the crust by crushing the graham crackers and mixing with sugar and melted butter. Press into a 9×13 baking pan and freeze for 20 minutes.
  2. In a medium bowl, whisk together the lemon pudding and half-and-half until thickened. Let it sit for 5 minutes.
  3. In a separate bowl, beat softened cream cheese and powdered sugar until smooth. Fold in the lemon pudding mixture and then gently mix in one container of Cool Whip.
  4. Spread the lemon mixture over the chilled crust, followed by the blueberry pie filling, then top with remaining Cool Whip.
  5. Cover and refrigerate for at least 8 hours before serving.
