  • 6 large eggs

Instructions

  1. Prepare raspberry puree by cooking raspberries over medium heat until broken down, strain seeds, and simmer until thickened.
  2. Preheat oven to 350°F (175°C).
  3. In a bowl, mix melted butter, flour, sugar, corn starch, and salt until crumbly. Press into a baking dish and bake for 15 minutes.
  4. Whisk together sugar and corn starch for the filling; add eggs one at a time, then stir in raspberry puree and lemon juice.
  5. Pour filling over baked crust and bake for an additional 30 minutes until set. Cool completely before cutting.
