  • 6 boneless, skinless chicken breasts
  • 5 slices of bacon, diced
  • 1/4 cup jalapeno slices, diced
  • 1/4 cup diced onion
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 oz crushed pork skins
  • 4 tablespoons butter, melted

Instructions

  1. Preheat oven to 425°F.
  2. Bake chicken in a casserole dish for 30-40 minutes until juices run clear.
  3. In a frying pan, fry bacon until crispy; remove and sauté onions in the bacon fat.
  4. In a mixing bowl, combine bacon, onions, jalapenos, cream cheese, mayonnaise, cheddar cheese, and Parmesan until well mixed.
  5. Spread the mixture over baked chicken and lower oven temperature to 350°F; bake for an additional 15 minutes.
  6. Combine crushed pork skins with Parmesan and melted butter; sprinkle on top of the chicken and broil for 2 minutes until golden.
