- 2 cups rotisserie chicken (shredded)

- 2 cups fresh baby spinach (or kale)
- Salt and freshly ground black pepper to taste
Instructions
- Heat olive oil in a large pot. Sauté diced onion, carrot, and celery for 5 minutes.
