  • 6 cups chicken stock
  • 1/2 cup low-fat cream cheese
  • 1/2 cup half and half (single cream)
  • 2 cups rotisserie chicken (shredded)
  • 1/3 cup Parmesan (grated)
  • 2 cups fresh baby spinach (or kale)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat olive oil in a large pot. Sauté diced onion, carrot, and celery for 5 minutes.
  2. Add minced garlic, sun-dried tomatoes, and red chili flakes; cook for another minute.
  3. Incorporate bay leaf, ditalini pasta, and chicken stock; bring to a boil. Simmer until pasta is nearly cooked (10–12 minutes).
  4. Stir in cream cheese and half-and-half until melted and thickened.
  5. Add shredded rotisserie chicken and spinach; mix well. Cover for 1–2 minutes to wilt spinach.
  6. Season with salt and pepper to taste before serving.
