  • 1/4 cup unsalted butter, cut into chunks
  • 1/4 cup packed light brown sugar
  • 2 Tbsp light corn syrup
  • 1 tsp vanilla extract or vanilla bean paste
  • 1/2 tsp fine salt
  • 1/2 cup unsalted butter, room temperature
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/4 tsp fine salt
  • 1 1/2 cups granulated sugar
  • 3/4 cup all-purpose flour
  • 2/3 cup unsweetened cocoa powder, sifted
  • 1/2 cup powdered sugar
  • 1/2 cup dark chocolate chips, chopped
  • 1/2 tsp fine salt
  • 2 large eggs, room temperature
  • 1/4 cup vegetable or canola oil
  • 1/4 cup unsalted butter, melted
  • 2 Tbsp water
  • 1 tsp vanilla extract or vanilla bean paste
  • 1/2 cup heavy whipping cream, room temperature
  • 2/3 cup dark chocolate chips
  • 2 Tbsp unsalted butter, room temperature
  • 1 Tbsp light corn syrup – optional
  • 1/4 tsp fine salt
  • flakey sea salt – garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the room-temperature butter with powdered sugar until fluffy.
  3. Add in flour and salt gradually until combined.
  4. Press this dough into the bottom of your greased 9×9 inch baking pan evenly.
  5. Bake for about 20 minutes until lightly golden.
  6. In a saucepan over medium heat, combine sweetened condensed milk, butter chunks, brown sugar, corn syrup, vanilla extract, and salt.
  7. Stir continuously until everything melts together to form a smooth caramel mixture.
  8. Pour this caramel over the baked shortbread crust evenly.
  9. In another mixing bowl, whisk together granulated sugar, cocoa powder, flour, chopped chocolate chips, and salt.
  10. Add eggs one at a time followed by oil and melted butter; mix well until combined.
  11. Pour brownie batter over the caramel layer in your baking pan.
  12. Bake in preheated oven for an additional 20 minutes or until set but still fudgy in the center.
  13. Heat heavy whipping cream in a saucepan until just boiling; pour over dark chocolate chips in a bowl.
  14. Let it sit for about 5 minutes before stirring until smooth; add butter and optional corn syrup if desired.
  15. Once brownies have cooled slightly after baking, pour ganache topping over them evenly.
  16. Sprinkle flakey sea salt on top as desired for extra flavor.
