- 1 1/2 cups granulated sugar
- 3/4 cup all-purpose flour
- 2/3 cup unsweetened cocoa powder, sifted
- 1/2 cup powdered sugar
- 1/2 cup dark chocolate chips, chopped
- 1/2 tsp fine salt
- 2 large eggs, room temperature
- 1/4 cup vegetable or canola oil
- 1/4 cup unsalted butter, melted
- 2 Tbsp water
- 1 tsp vanilla extract or vanilla bean paste
- 1/2 cup heavy whipping cream, room temperature
- 2/3 cup dark chocolate chips
- 2 Tbsp unsalted butter, room temperature
- 1 Tbsp light corn syrup – optional
- 1/4 tsp fine salt
- flakey sea salt – garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the room-temperature butter with powdered sugar until fluffy.
- Add in flour and salt gradually until combined.
- Press this dough into the bottom of your greased 9×9 inch baking pan evenly.
- Bake for about 20 minutes until lightly golden.
- In a saucepan over medium heat, combine sweetened condensed milk, butter chunks, brown sugar, corn syrup, vanilla extract, and salt.
- Stir continuously until everything melts together to form a smooth caramel mixture.
- Pour this caramel over the baked shortbread crust evenly.
- In another mixing bowl, whisk together granulated sugar, cocoa powder, flour, chopped chocolate chips, and salt.
- Add eggs one at a time followed by oil and melted butter; mix well until combined.
