  • 1/8 teaspoon salt
  • 2 tablespoons keto approved sweetener (like Swerve)
  • 3 tablespoons butter
  • 3/4 cup organic pumpkin puree
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1/3 cup powdered sweetener (Swerve Confectioners)
  • 1/2 cup heavy whipping cream
  • 2 oz cream cheese
  • 2 tablespoons powdered sweetener

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with silicone baking cups or spray with nonstick cooking spray.
  2. In a bowl, combine almond flour, salt, sweetener, and melted butter until it resembles wet sand. Press into muffin cups.
  3. Bake crusts for 10–12 minutes until golden brown.
  4. Blend pumpkin puree, eggs, vanilla extract, pumpkin pie spice, and powdered sweetener until smooth. Add cream and cream cheese; blend again.
  5. Fill baked crusts with the mixture and bake for an additional 20–25 minutes until set but wobbly in the center.
  6. Chill for at least one hour before serving.
