  • 225 g (1 3/4 cups) all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 175 g (3/4 cup) softened butter
  • 150 g (3/4 cup) granulated sugar
  • 150 ml (2/3 cup) milk
  • 2 large eggs (lightly beaten)
  • 1.5 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 170°C (325°F). Grease and line a loaf tin with parchment paper.
  2. In a bowl, sift together flour, baking powder, and salt; set aside.
  3. In another bowl, cream the softened butter and sugar until light and fluffy.
  4. Add the beaten eggs gradually, mixing on low speed until well incorporated. Mix in the vanilla extract.
  5. Alternately add half of the milk and dry ingredients to the creamed mixture, mixing gently until combined. Repeat with the remaining milk and dry ingredients.
  6. Pour the batter into the prepared loaf tin and bake for 60-65 minutes or until a skewer inserted comes out clean.
  7. Allow cooling in the tin for about ten minutes before transferring to a wire rack.
