  • 1¼ lbs boneless skinless chicken breasts
  • â…” cup hoisin sauce
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 4 cups sliced green cabbage
  • 3 tablespoons vegetable oil
  • 2 large eggs
  • 1½ cups sliced shiitake mushrooms

Instructions

  1. In a bowl, whisk together hoisin sauce, soy sauce, rice vinegar, garlic, ginger, cornstarch, sesame oil, black pepper, and mirin.
  2. Reserve ½ cup of the marinade; add remaining marinade to cut chicken. Marinate for 10-15 minutes.
  3. Heat skillet over medium-high heat with 1 tablespoon oil. Cook marinated chicken until browned (2-3 minutes) and set aside.
  4. Add mushrooms to the skillet; sauté until browned and remove.
  5. Scramble eggs in the same skillet until set; slice into strips.
  6. Stir-fry cabbage until slightly wilted; return chicken, mushrooms, and eggs to the skillet along with reserved marinade. Cook until heated through.
