Ingredients

  • 6 Chicken thighs (bone-in)
  • 2 Cups Basmati rice
  • 3 ½ Cups chicken stock
  • 1 Onion (finely chopped)
  • 10 Garlic cloves (crushed)
  • Spices: turmeric, cumin, coriander, oregano
  • Olive oil, lemon juice, salt, and pepper

Instructions

  1. Marinate chicken with lemon juice, spices, garlic, salt, and pepper in a large bowl for at least one hour.
  2. Preheat oven to 350°F (175°C).
  3. Brown marinated chicken in an ovenproof skillet over medium heat for about 5 minutes on each side.
  4. In the same skillet, sauté onion and garlic in olive oil before adding the rice and remaining spices.
  5. Pour in chicken stock and place browned chicken on top; cover and bake for 20 minutes until rice absorbs all liquid.
  6. Fluff rice before serving with lime wedges, Greek yogurt, and fresh coriander.
