  • 10 oz. mushrooms (button or baby bella work well)
  • 2 Tablespoons salted butter
  • ½ cup all-purpose flour
  • 34 Tablespoons olive oil
  • 2 ½ cups beef broth
  • 1 chicken bouillon cube or 1 tsp better than bouillon
  • 1 teaspoon soy sauce (can sub Worcestershire sauce)
  • 1 teaspoon onion powder
  • ½ teaspoon EACH: mustard powder, dried thyme
  • ½ cup dry white wine
  • 3 cloves garlic (minced)
  • 3 Tablespoons cornstarch
  • 1/3 cup heavy cream

Instructions

  1. Season the chicken with salt and pepper. Heat olive oil in a skillet over medium heat; cook chicken until golden brown (5-7 minutes per side), then set aside.
  2. In the same skillet, melt butter and sauté sliced mushrooms until browned. Add minced garlic and stir for another minute.
  3. Sprinkle flour over mushrooms; gradually whisk in beef broth until smooth. Add remaining ingredients and simmer until thickened (10 minutes).
  4. Return chicken to the skillet; cover with sauce and simmer on low for 15-20 minutes until cooked through.
  5. Stir in heavy cream before serving.
