  • 2 pounds pot roast
  • 32 oz beef broth
  • 2 russet potatoes, chopped
  • 1 bag frozen seasoning blend
  • 1 bag frozen peas
  • 1 bag frozen green beans
  • 1 bag frozen corn
  • 4 large carrots, chopped
  • 2 cans (10.75 oz each) tomato soup
  • Salt and pepper to taste

Instructions

  1. Season the pot roast with salt and pepper. Place it in a slow cooker with half of the beef broth and cook on LOW for about 10 hours until tender. Shred with two forks.
  2. In a large pot, heat oil over medium heat. Add chopped carrots and seasoning blend; sauté until tender.
  3. Stir in shredded beef, chopped potatoes, remaining frozen vegetables, remaining beef broth, tomato soup, water, salt, and pepper.
  4. Bring the mixture to a boil, then lower the heat and let it simmer for about an hour, stirring occasionally.
  5. Adjust the consistency by adding water as needed before serving.
