  • 3 tablespoons (44g) very hot water
  • 1/4 cup strawberry reduction
  • 1 cup (240g) heavy cream
  • 1/4 cup (29g) powdered sugar
  • 1 teaspoon (4g) vanilla
  • 3 sticks (339g) unsalted butter, softened
  • 7 cups (805 g) confectioners sugar
  • 1/3 cup (72g) milk or cream, more if needed
  • 1/2 teaspoon salt (optional)
  • 2 teaspoons (8g) vanilla extract
  • Pink coloring gel (optional)
  • 4 oz. dark chocolate chips
  • 4 oz. heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and grease three 8-inch round cake pans.
  2. Mix dry ingredients (cake flour, baking powder, baking soda, and salt) in one bowl; combine wet ingredients (buttermilk, vegetable oil, vanilla) in another.
  3. In a stand mixer, cream softened butter and sugar until fluffy; add eggs one by one until well incorporated.
  4. Gradually mix dry ingredients into the wet mixture until just combined.
  5. Divide the batter into three bowls; add cocoa powder to one bowl and strawberry reduction to another.
  6. Pour batters into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
