  • 1/2 cup all natural creamy almond butter (can sub any other nut or seed butter)
  • 1/4 cup maple syrup (can sub honey, agave or date syrup)
  • 1 1/4 cup oat flour
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground ginger
  • 1/2 cup shredded carrots (I prefer to use a cheese grater or microplane)
  • 1/2 cup white chocolate chips (melted with 1 tbsp coconut oil)
  • walnuts
  • raisins
  • cinnamon
  • ground ginger

Instructions

  1. In a mixing bowl, combine maple syrup, almond butter, cinnamon, ground ginger, and nutmeg. Mix until well blended.
  2. Stir in oat flour and shredded carrots until fully incorporated.
  3. Use a cookie scoop to form the mixture into small balls and place them on a lined baking sheet. Freeze while melting white chocolate.
  4. Melt white chocolate with coconut oil in the microwave in 30-second intervals until smooth.
  5. Dip each ball into melted chocolate and return to the baking sheet. Freeze briefly before drizzling with more chocolate.
  6. Top with walnuts and cinnamon, then chill for 15 minutes before serving.
