Ingredients

  • 4 oz cream cheese (softened)
  • 2 Tbsp powdered sugar
  • 1/3 cup pumpkin puree
  • 2 cups graham cracker crumbs
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 2 cups white chocolate chips
  • 12 tsp coconut oil (optional)

Instructions

  1. In a mixing bowl, blend cream cheese and powdered sugar until creamy.
  2. Mix in pumpkin puree, 1 cup of graham cracker crumbs, pumpkin pie spice, and cinnamon until well combined. Add remaining graham cracker crumbs.
  3. Chill dough for at least 30 minutes.
  4. Roll the chilled mixture into balls and place on a parchment-lined baking sheet. Refrigerate again for another 30 minutes.
  5. Melt white chocolate chips in the microwave and dip each ball in chocolate; place back on the baking sheet and drizzle with any leftover chocolate.
  6. Chill until set before serving.
