  • 1 large salmon fillet (or 4 6-ounce salmon fillets)
  • 2 bell peppers, chopped
  • 1 onion, chopped
  • 1 cup carrots, chopped or sliced
  • 2 cups broccoli florets
  • Salt and pepper to taste
  • 2 tablespoons oil
  • 1 ½ cups teriyaki sauce
  • ½ cup soy sauce
  • 2 teaspoons minced garlic
  • ½ teaspoon ground ginger
  • ½ cup packed brown sugar
  • 2 tablespoons honey
  • 2 tablespoons cornstarch

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss chopped vegetables with oil, salt, and pepper until well coated.
  3. Spread the vegetable mixture evenly on a baking sheet, then place the salmon fillet(s) on top.
  4. In a saucepan over medium heat, whisk together water, soy sauce, garlic, ginger, brown sugar, honey, and cornstarch until thickened.
  5. Pour half of the teriyaki sauce over the salmon and vegetables. Reserve the rest for serving.
  6. Bake for about 20 minutes or until the salmon flakes easily with a fork.
  7. Serve hot over steamed rice and drizzle with remaining teriyaki sauce.
