  • 6 skinless chicken thighs
  • 1½ cups uncooked basmati rice
  • 1 cup chopped onion
  • 2 tbsp olive oil
  • 3 cups low-sodium chicken stock
  • Seasonings: smoked paprika, mixed herbs, onion powder, garlic powder, salt, and pepper

Instructions

  1. In a bowl, mix together smoked paprika, mixed herbs, garlic powder, onion powder, salt, and pepper. Rinse the rice until the water runs clear.
  2. Season the chicken thighs with most of the spice mixture.
  3. Heat olive oil in a large skillet over medium-high heat and sear the chicken until golden brown on both sides. Remove from pan.
  4. In the same skillet, sauté onions until translucent. Add butter and rinsed rice; toast for 1-2 minutes.
  5. Pour in chicken stock, add reserved seasoning, and arrange chicken on top of rice. Cover and cook on low for 15-20 minutes until rice is tender.
  6. Garnish with chopped green onions before serving.
