  • 1 1/2 lb chicken breast (about 34 pieces)
  • 2 lb red potatoes
  • 1 lb fresh green beans
  • 1/3 c grated parmesan cheese
  • 4 garlic cloves, minced
  • 6 T olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F.
  2. Line a baking sheet with parchment paper. In a medium bowl, mix together potatoes, 2 T olive oil, minced garlic, parmesan cheese, salt, and pepper. Spread on one-third of the sheet pan.
  3. Bake potatoes for 10-15 minutes.
  4. While the potatoes are baking, combine chicken ingredients in the same bowl. Coat chicken well and add to the pan after potato cooking time.
  5. Toss green beans with remaining olive oil and garlic; add them to the pan.
  6. Bake everything together for about 25 minutes or until chicken reaches an internal temperature of 165°F.
