  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup jelly (grape or strawberry)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together peanut butter, softened butter, granulated sugar, and brown sugar until fluffy.
  3. Mix in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture until you form a smooth dough.
  6. Scoop out 2 tablespoons of dough, flatten into discs, and place half on the prepared baking sheet.
  7. Add about 1 teaspoon of jelly to the center of each disc.
  8. Top with another disc of dough and press edges to seal; use a fork to crimp if desired.
  9. Bake for 12-15 minutes or until edges are golden brown.
  10. Let cool on the baking sheet for five minutes before transferring to a wire rack.
