  • 1/2 cup finely chopped pecans
  • 1/3 cup unseasoned panko breadcrumbs
  • 1 tablespoon unsalted butter, melted
  • 1/2 cup pure maple syrup
  • 1/4 cup Dijon mustard
  • 1/4 cup bourbon
  • Minced garlic (1 large clove or 2 small)
  • Fresh thyme leaves
  • Smoked paprika
  • Kosher salt
  • Black pepper

Instructions

  1. 1. Preheat oven to 425°F and prepare a baking sheet with cooking spray or foil.
  2. 2. Combine pecans, panko breadcrumbs, thyme, smoked paprika, melted butter, salt, and pepper in a bowl.
  3. 3. In a heavy-bottomed pot over medium heat, mix maple syrup, Dijon mustard, bourbon, minced garlic, and pepper until well combined.
  4. 4. Place salmon on the baking sheet skin-side down; season and brush with part of the glaze. Press the pecan mixture onto the fillets.
  5. 5. Roast for 12–14 minutes or until salmon flakes easily with a fork.
