Instructions

  1. Prepare the pineapple by peeling, coring, and dicing it into manageable chunks.
  2. In a medium saucepan, combine the sugar, apple cider vinegar, red pepper flakes, and ground ginger. Stir well and bring to a gentle boil over medium heat.
  3. Add the pineapple chunks into the boiling syrup. Reduce heat to low and let simmer for 10 minutes while stirring occasionally.
  4. Remove from heat and let cool for about 30 minutes. If desired, stir in fresh mint leaves for added flavor.
  5. Transfer the mixture into sterilized jars along with the syrup. Seal tightly and refrigerate for at least 24 hours to allow flavors to meld before serving.
