Instructions
- Prepare the pineapple by peeling, coring, and dicing it into manageable chunks.
- In a medium saucepan, combine the sugar, apple cider vinegar, red pepper flakes, and ground ginger. Stir well and bring to a gentle boil over medium heat.
- Add the pineapple chunks into the boiling syrup. Reduce heat to low and let simmer for 10 minutes while stirring occasionally.
- Remove from heat and let cool for about 30 minutes. If desired, stir in fresh mint leaves for added flavor.
- Transfer the mixture into sterilized jars along with the syrup. Seal tightly and refrigerate for at least 24 hours to allow flavors to meld before serving.
