  • 1 tablespoon vanilla extract (for frosting)
  • 1/2 teaspoon salt (for frosting)
  • 7 cups powdered sugar (for frosting)

Instructions

  1. Preheat oven to 350°F. Grease and flour three 8-inch round cake pans.
  2. In a large mixing bowl, combine pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract. Mix well.
  3. In another bowl, whisk together flour, baking powder, baking soda, spices, and salt. Gradually mix dry ingredients into the wet mixture until just combined.
  4. Divide batter among prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Cool completely.
  5. For the frosting, cream together room temperature cream cheese and butter until fluffy; add powdered sugar and vanilla until smooth.
