  • 2 tsp pumpkin pie spice
  • 3/4 cup unsalted butter, melted and slightly cooled
  • 1 1/2 cups brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup pumpkin puree
  • 8 oz cream cheese, room temperature
  • 2 tablespoons pumpkin puree
  • 1 1/4 cups powdered sugar
  • 1 teaspoon vanilla

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In one bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin pie spice.
  3. In another bowl, blend melted butter and brown sugar until creamy. Add egg and vanilla extract; mix well. Stir in pumpkin puree.
  4. Gradually combine dry ingredients with wet ingredients until fully mixed.
  5. Scoop rounded tablespoons of dough onto the prepared baking sheet.
  6. Bake for about 12 minutes until edges are lightly golden. Allow to cool on a wire rack.
  7. For the cream cheese filling, beat cream cheese and pumpkin puree together until smooth, then add powdered sugar and vanilla.
  8. Once cookies are cool, spread or pipe cream cheese filling on top and dust with cinnamon or nutmeg.
