  • 1.3 lbs ground turkey
  • 6 small links chicken maple sausage
  • 1 can (15.5 oz) cannellini beans
  • 1 can (15.5 oz) red kidney beans
  • 1 sweet onion
  • 3 cloves garlic
  • 2 bell peppers (yellow and orange)
  • 1 can (29 oz) pumpkin purée
  • 1 can (28 oz) diced tomatoes
  • 1 bottle (12 fl oz) pumpkin beer
  • Chicken broth

Instructions

  1. Thinly slice the sausages or remove them from their casings.
  2. In a large pot, heat olive oil and sauté garlic and onion until translucent. Add bell peppers and cook for another 5 minutes.
  3. In the same pot, brown the ground turkey and sausage for about 10 minutes, seasoning with salt and pepper.
  4. Return vegetables to the pot; add diced tomatoes, pumpkin purée, beans, spices, pumpkin beer, and chicken broth. Stir well.
  5. Simmer on low heat for 1.5 to 2 hours, stirring occasionally.
  6. Serve hot with toppings like cheese, green onions, or sour cream.
