  • 2 cups canned pumpkin
  • ⅔ cup brown sugar
  • ⅔ cup granulated sugar
  • 1 cup applesauce or canola oil
  • 3 eggs (room temperature)
  • 1 tbsp vanilla extract
  • 1½ cups semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9×5 loaf pans.
  2. In a mixing bowl, whisk together the flour, salt, baking powder, baking soda, and pumpkin pie spice.
  3. In another bowl, mix the canned pumpkin, sugars, applesauce (or oil), eggs, and vanilla until smooth.
  4. Gently fold the dry ingredients into the wet mixture until just combined. Add chocolate chips and fold gently.
  5. Divide batter between prepared loaf pans and sprinkle reserved mini chocolate chips on top.
  6. Bake for approximately 60 minutes or until a toothpick comes out clean.
