- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon fine salt
- 1 1/2 teaspoons pumpkin pie spice
- 2 large eggs
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar (dark or light)
- 1/3 cup vegetable oil
- 1 cup canned pumpkin puree
- 1 teaspoon vanilla
- 8 ounces block cream cheese, at room temperature
- 1/2 cup granulated sugar
- 1 large egg, at room temperature
- 1/2 teaspoon vanilla
- 1/4 cup all-purpose flour
Instructions
- Preheat oven to 325°F and grease a 9” x 5” loaf pan.
- In one bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
- In another bowl, mix eggs, granulated sugar, brown sugar, vegetable oil, pumpkin puree, and vanilla until smooth.
- Gradually combine the dry ingredients into the wet mixture until just mixed.
- For the cream cheese layer, beat cream cheese and sugar until creamy; add egg and vanilla and mix until smooth.
- Layer half of the pumpkin batter in the pan; spoon half of the cream cheese mixture on top. Repeat layers and gently swirl with a knife.
- Bake for about 1 hour and 15 minutes until a toothpick comes out clean. Cool before serving.
