  • 100 g canned pumpkin purée
  • 3 tbsp honey (or maple syrup)
  • 1 tbsp pumpkin spice
  • 12 g sea salt
  • 500 g white bread flour

Instructions

  1. Prepare your starter by mixing mature starter with flour and tepid water; let sit until bubbly.
  2. In a large bowl, combine active starter, water, pumpkin purée, honey, spices, salt, and flour; mix until blended.
  3. Knead dough on a floured surface for about 10 minutes until smooth.
  4. Place in an oiled bowl, cover with a towel, and let rise for about 4 hours until doubled.
  5. Shape into a round loaf; wrap lightly with kitchen string for the pumpkin effect.
  6. Allow dough to rise again for 1-2 hours until puffy.
  7. Preheat oven to 450°F (230°C), then bake on a preheated baking sheet for about 45 minutes until golden.
