  • 1 tbsp pumpkin pie spice
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 10 tbsp unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 eggs, at room temperature
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk, at room temperature
  • 1 cup canned pumpkin puree, at room temperature
  • 1/4 cup espresso or strong coffee
  • 1/3 cup whole milk
  • 1/2 cup sweetened condensed milk
  • 1/4 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, cold
  • 2 cups powdered sugar
  • 1 1/2 tsp vanilla extract
  • 2 tsp instant espresso powder
  • 1 1/2 tsp pumpkin pie spice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In one bowl, whisk together flour, pumpkin pie spice, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, cream softened butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla, buttermilk, and pumpkin puree until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Pour batter into the prepared pan and bake for about 38 minutes or until a toothpick comes out clean. Let cool completely.
  6. Prepare the soak by mixing espresso, milk, sweetened condensed milk, pumpkin spice, and vanilla in a small bowl. Poke holes in the cooled cake and evenly pour the soak over it.
  7. For the frosting, beat butter and cream cheese until smooth; mix in powdered sugar, vanilla, espresso powder, and pumpkin spice until well combined.
  8. Frost the cooled cake generously and serve.
