- 15.25 oz. box carrot cake mix
- 15 oz. can pure pumpkin
- 2 Tbsp. flour
- 2 Tbsp. brown sugar
- 1 tsp. granulated sugar
- 1/4 tsp. cinnamon
- 1 1/2 Tbsp. cold butter
Instructions
- Preheat your oven to 400°F (200°C) and line a muffin pan with cupcake liners.
- In a large bowl, mix the carrot cake mix and pure pumpkin until combined.
- In another bowl, blend flour, brown sugar, granulated sugar, cinnamon, and cold butter until crumbly to create the streusel topping.
- Fill muffin liners about three-quarters full with batter and sprinkle the streusel topping evenly over each.
- Bake for approximately 20 minutes or until a toothpick comes out clean.
