  • 1 1/2 cups Arborio rice
  • 12 oz cremini or button mushrooms, sliced
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 2 tbsp unsalted butter (for finishing)
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth, warmed
  • 1/2 cup dry white wine
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 2 tbsp chopped fresh parsley (optional)

Instructions

  1. Heat olive oil and 1 tbsp of butter in a large skillet over medium heat. Sauté sliced mushrooms until golden brown, about 6-8 minutes. Remove and set aside.
  2. In the same skillet, cook chopped onion until translucent (about 3 minutes), then add minced garlic and cook for an additional minute.
  3. Stir in Arborio rice, cooking until edges are translucent (about 2 minutes).
  4. Pour in dry white wine and stir until absorbed.
  5. Gradually add warm vegetable broth one ladle at a time, stirring frequently until absorbed before adding more (approximately 18-20 minutes).
  6. Mix in sautéed mushrooms, remaining butter, grated Parmesan cheese, salt, and pepper; cook for another two minutes.
  7. Serve immediately garnished with extra Parmesan and parsley.
