Ingredients
- 1 whole chicken (4–5 pounds)
- 2 tablespoons olive oil
- 1 tablespoon garlic, minced
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- Zest and juice of 2 large oranges
- 1 tablespoon honey
- 1 tablespoon soy sauce
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 1 small onion, quartered
- 1 cup chicken broth
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix olive oil, garlic, thyme, rosemary, orange zest and juice, honey, soy sauce, Dijon mustard, salt, and pepper.
- Place the chicken in a roasting pan and coat with half of the marinade. Marinate for at least 15 minutes.
- Add onion around the chicken and pour chicken broth into the pan.
- Roast for about 1 hour and 15 minutes or until internal temperature reaches 165°F (75°C), basting occasionally.
- Let rest for 10-15 minutes before carving.
