  • 1 whole chicken (45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix olive oil, garlic, thyme, rosemary, orange zest and juice, honey, soy sauce, Dijon mustard, salt, and pepper.
  3. Place the chicken in a roasting pan and coat with half of the marinade. Marinate for at least 15 minutes.
  4. Add onion around the chicken and pour chicken broth into the pan.
  5. Roast for about 1 hour and 15 minutes or until internal temperature reaches 165°F (75°C), basting occasionally.
  6. Let rest for 10-15 minutes before carving.
