- 4 medium apples
- 3 tbsp salted butter (for apple filling)
- 1–2 tbsp apple cider
- 1/3 cup light brown sugar, packed
- 1 and 1/4 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ground cloves
- 1/8 tsp allspice
- 1–2 tsp lemon juice (to taste)
- 2 tsp cornstarch
- 2 tsp water
- 3 cups cinnamon graham cracker crumbs
- 1/2 cup + 3 tbsp salted butter, melted (for crust)
- 32 ounces cream cheese, at room temperature
- 1 and 1/2 cups granulated sugar
- 4 large eggs, at room temperature
- 1 cup full-fat sour cream, at room temperature
- 2 tsp vanilla extract
- 1 tsp cinnamon (for filling)
- 1/4 tsp nutmeg (for filling)
- 1/8 tsp ground cloves (for filling)
- 1/4 cup all-purpose flour (for crumble topping)
- 1/2 cup old-fashioned whole rolled oats (for crumble topping)
- 1/4 cup brown sugar, packed (for crumble topping)
- 1/2 tsp cinnamon (for crumble topping)
- 1/8 tsp salt (for crumble topping)
- 1/4 cup cold salted butter, cubed (for crumble topping)
- 6 tbsp salted butter, cubed (for caramel sauce)
- 1 cup granulated sugar (for caramel sauce)
- 1/2 cup + 1 tbsp heavy cream (for caramel sauce)
- pinch of flaky sea salt
Instructions
- Preheat your oven to 350°F and prepare a springform pan.
- Cook sliced apples with butter and spices until tender.
- Mix graham cracker crumbs and melted butter; press into the pan and bake for 10 minutes.
- Beat cream cheese until smooth; gradually add sugar, eggs, sour cream, and spices.
- Layer half of the cheesecake batter, followed by apple filling, then top with remaining batter.
- Bake in a water bath for about 90 to 110 minutes.
- Cool gradually in the oven before chilling for at least six hours.
