- 1/2 cup (120ml) thick caramel sauce (homemade or store-bought)

Instructions
- Prepare the cheesecake filling by mixing softened cream cheese, granulated sugar, and vanilla until smooth. Pipe into a bag and chill.
- In another bowl, whisk together flour, baking soda, baking powder, and salt. Cream butter and sugars until fluffy; mix in the egg and vanilla. Gradually combine wet and dry ingredients.
- Form cookie dough discs, fill with cheesecake mixture, and shape into balls. Chill for 20-30 minutes.
