  • 1/2 cup (100g) packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 4 oz (115g) cream cheese, softened
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) thick caramel sauce (homemade or store-bought)
  • Flaky sea salt, for sprinkling

Instructions

  1. Prepare the cheesecake filling by mixing softened cream cheese, granulated sugar, and vanilla until smooth. Pipe into a bag and chill.
  2. In another bowl, whisk together flour, baking soda, baking powder, and salt. Cream butter and sugars until fluffy; mix in the egg and vanilla. Gradually combine wet and dry ingredients.
  3. Form cookie dough discs, fill with cheesecake mixture, and shape into balls. Chill for 20-30 minutes.
  4. Bake at 350°F for 10-12 minutes until golden at the edges. Cool slightly before adding toppings.
