  • 1 cup sugar
  • 6 tablespoons unsalted butter
  • 1/2 cup heavy whipping cream
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour (plus additional for crust)
  • 3 tablespoons sugar (for crust)
  • 5 tablespoons cold unsalted butter (for crust)
  • 3/4 cup room temperature unsalted butter
  • 1/4 cup light corn syrup
  • 1 large egg
  • 2/3 cup evaporated milk

Instructions

  1. Prepare the salted caramel by combining water and sugar in a saucepan over medium heat until dissolved. Boil without stirring until amber-colored. Remove from heat and whisk in butter, then add heavy cream and salt. Set aside.
  2. Preheat the oven to 350°F (175°C). In a bowl, mix flour and sugar for the crust, cut in cold butter until crumbly, then press into a greased 9×13 inch baking pan.
  3. For the gooey topping, cream room temperature butter and sugar until fluffy. Mix in corn syrup and egg, followed by flour and evaporated milk until smooth.
  4. Pour over the crust, drizzle half of the salted caramel on top, and bake for about 50 minutes or until set but jiggly in the center.
